Spicy Apricot Glaze

¼ cup balsamic vinegar

½ cup water

2 tablespoons honey

¼ teaspoon black pepper

¼ teaspoon kosher salt

¼ cup minced shallots

1 teaspoon ground ginger

¼ teaspoon hot red pepper flakes

15 chopped Turkish dried apricots

Combine all ingredients except apricots into a medium sauce pan. Bring to a boil. Reduce heat and cook for 5 minutes. Add apricots, cook 10 to 15 minutes until liquid has evaporated and fruit is jammy. May have to add some water if glaze-like consistency is not there. Set glaze aside to be used on baked chicken.
