Mauer's sugar-free organic lemonade

10 medium organic lemons

24 packets organic stevia, equal to 1 cup sugar

5 cups cold spring water

Scrub the lemons well under cold running water. Dry the lemons and slice each in half, pole-to-pole, then crosswise into 1/8-inch slices. Pick out the seeds.

Place the sliced lemons into a large, deep, non-aluminum mixing bowl and add the stevia. Using a potato masher, mash the lemons until the slices give up their juice. (This will take about 5 minutes.)

Over a large bowl, pour about half the lemon slices and liquid into a large sieve, pressing hard with the masher or a large wooden spoon to release as much juice as possible. Pour juice into a large pitcher and add remaining solids and their juice to the pitcher. Add cold spring water to the pitcher; stirring until well combined. Chill for one hour.

Hints: Taste the lemonade and add more stevia if needed. Also, adding a pinch of salt heightens the natural sweetness of this lemonade, just as salt heightens salted caramel's sweetness.

Stir before serving; add ice if desired. Makes about 2 quarts, serving 6.
