District 128 Community Education offers cooking classes

District 128 Community Education cooking instructors will offer a variety of classes this fall.

Join Food Network personality Chef Matt Zagorski as he presents an epicurean adventure featuring the great American comfort food: meatloaf.

In Meatloaf — Changing the World One Loaf at a Time on Oct. 7, participants will create a Mexican meatloaf, an Italian meatloaf, and a stuffed meatloaf. This class will also feature cheddar cheese and mustard mashed potatoes.

Additionally, Chef Zagorski will demonstrate the process for creating your own signature meatloaf masterpiece. He will also share his recipes in Ultimate Desserts — Hands-On Nov. 18, in which participants will make chocolate amaretto soufflé, Bailey’s and banana trifle, and coconut cream pie, which took second place in a national competition.

Chef-owner Dave Esau has been in the gourmet restaurant business for 32 years and brings his experience to suburban Chicago. In Baking 101 on Oct. 15, Chef Esau will demonstrate baking techniques to sharpen participants’ skills and provide tested recipes such as roulade with raspberry mousse, chocolate chip cookies and cinnamon rolls. Tastings and recipes are included.

Chef Michael Maddox, a 2009 James Beard nominee for Midwest Best Chef of the Year, served as owner and chef de la cuisine of Le Titi de Paris from 1993-2012. Maddox will present the flavors of French Provinces Nov. 6 with cuisine from the Normandy, Provence, Alsace, and Burgundy regions.

All classes involve tasting, so don’t fill up before coming. Registration is required and should be completed one week before class begins. All classes are available on the Community Education website, www.ComEd128.org. The Community Education staff is available for assistance at (847) 247-4576.
