Quick sandwiches to make and take
This is our go-to "to go" sandwich for Labor Day picnics, pool parties, outdoor concerts and general end-of-summer frolics. We've tried to cover all the bases - safety, health, transport and taste.
The trick to satisfactory sandwich schlepping boils down to bread and condiments: You need a sturdy roll, bun or slice that won't wilt under pressure. Who wants a soggy sandwich? Ciabatta rolls do the trick.
For ease and minimal worry about botulism and other dastardly infestations, we've veered beyond mayonnaise to slather our sandwich with guacamole. It's a healthier choice than mayo anyway.
Oh, we forgot one mandatory criterion: quick and easy. Our sandwiches fly together in about three minutes flat. This is Labor Day, after all. For a terrific portable cucumber and tomato side salad, please visit our Web site at www.KitchenScoop.com.
Suggested menu: Ciabatta, Chicken and Cheese Sandwich with tomato and cucumber salad and baked reduced-fat chips.
