Needhams Candy

½ cup margarine

¾ cup mashed potatoes, unseasoned

½ teaspoon salt

2 pounds powdered sugar

14 ounces flaked coconut

2 teaspoons vanilla extract

Dipping chocolate

12 ounces semisweet chocolate chips

4 ounces unsweetened chocolate

½ cup paraffin wax

Butter a 9-by-13-inch ban.

In a large sauce pan melt margarine. Remove pan from heat. Add potatoes, salt, powdered sugar, coconut and vanilla. Mix well; this may take 5 minutes. If mixture cools and is hard to work, re-heat a little.

Spread into prepared pan and refrigerate until firm, at least 3 hours. Cut into 1-inch squares and refrigerate, covered, until ready to dip in chocolate.

To dip: Melt chocolate chips, unsweetened chocolate and wax in double boiler. Thread a coconut square onto a long wooden skewer and dip into chocolate. Place on waxed paper until set. Drizzle remaining chocolate on top to cover any holes.

Makes 117 candies.
