The establishment at 326 Yorktown Center is designed for the person who loves great wine and food.
Derek Rettell co-owns the business and expects to interview hundreds of applicants before it opens.
The eatery conducts an intense weeklong wine and food training program for the new hires in order to make them feel comfortable in educating customers on the more than 300 wines from around the world that can be found on the menu. Bringing in wine experts along with hands-on wine tastings are part of the employee training program.

A new look: The renovation of J.C. Penney at Golf Mill in Niles is complete.
The store first opened at the mall in 1966, said Jim Voeller, J.C. Penney Niles store manager.
The updated store features wider aisles, improved lighting and new signs and graphics that make it easier to locate brands and departments.
Large and centrally located customer-service stations makes checking out easier. New carpet, tile and updated fitting rooms and restrooms were also part of the renovation.
Bigger concept: Forever 21 opened at the Shops on Butterfield at Yorktown Center in Lombard.
The department store concept is an extension of the traditional mall-based stores.
The 33,000-square-foot mega-store offers a broad lineup of up-to-the-minute styles and trends, including departments for men, women, jewelry, intimates, shoes and accessories.
The store carries brand new concepts including Heritage 1981 and the ultra chic Twelve by Twelve.
Each room within the store is themed to appeal to the shoppers moods and styles.
Getting in shape: The holidays are just around the corner. If you're hoping to get in shape before all the parties and eating begins, two area malls are kicking off a fun, exercise program.
Stratford Square in Bloomingdale and Westfield Fox Valley in Aurora are hosting a cardiovascular and resistance training program where you bring your baby.
