Swiss Garden Wraps

2 tablespoons fat-free or light plain yogurt2 1/2 teaspoons prepared mustard 1/4 teaspoon honey 1/4 teaspoon pepper4 fat-free or low-fat flour tortillas (8-inch), warmed4 red leaf lettuce leaves4 ounces thinly sliced cooked turkey breast, cooked without salt, skin and all visible fat discarded4 slices ( 3/4 ounces each) fat-free or low-fat Swiss cheese 1/2 cup finely chopped red onion 1/4 medium cucumber, peeled, cut horizontally into 8 slices, and halved2 medium Italian plum tomatoes, each cut lengthwise into 8 slicesPepper to taste (optional)In a small bowl, whisk together the yogurt, mustard, honey and 1/4 teaspoon pepper.To assemble the wraps, spread one fourth of the mixture over each tortilla. Top each with 1 lettuce leaf, 1 ounce turkey, 1 slice cheese, 2 tablespoons red onion, 4 slices cucumber and 4 slices tomato. Sprinkle with the pepper. Fold the sides of each tortilla toward the center, overlapping slightly.
