Glazed Brownies
4 eggs2 cups sugar1 1/3 cups oil2 teaspoons vanilla extract4 squares (1 ounce each) unsweetened or semi-sweet chocolate, melted2 cups flour1 teaspoon salt1 teaspoon baking powder1 cup chopped nuts optionalGlaze3-4 tablespoons unsweetened cocoa powder4-5 tablespoons hot coffee or hot milk 1/2 teaspoon vanilla extract1 pound powdered sugarHeat oven to 350 degrees. Grease a 10-by-15-inch baking pan.In a large bowl with an electric mixer, beat eggs with sugar; add oil, vanilla and melted chocolate and mix until well combined. By hand stir in flour, salt and baking powder. Add nuts if desired. Pour batter into prepared pan and bake 20 minutes or until moist crumbs cling to a toothpick inserted in center. (Bake longer for less chewy brownies.)For the glaze: Combine cocoa, coffee or milk, vanilla and powdered sugar. Pour over brownies while still warm and spread evenly.
