Grilled Salmon Salad

1 bag (about 12 ounces) mixed salad greens 1/2 cucumber, seeded, peeled and sliced in semi-circles1 large Bosc pear, sliced4 thin slices red onion, cut in thirds 1/2 cup red or green grapesDried cranberries to tasteAlmond slices to taste5 ounces salmon, grilled and flaked1 bottle (8 ounces) prepared lemon dill dressingPlace washed mixed greens in large salad bowl. Add cucumber, pear, red onion, grapes, cranberries, almond slices and salmon. Toss gently. Serve with dressing.Serves six. Cook's note: You can substitute 1 boneless chicken breast, grilled and sliced, for the salmon.Nutrition values per serving: 192 calories, 12 g fat (2 g saturated), 16 g carbohydrates, 3 g fiber, 7 g protein, 15 mg cholesterol, 143 mg sodium.
