Replicating a restaurant's meatless Monday special at home
I think most of us are cooking from the pantry, fridge and freezer these days. As much as I love to cook, I miss being able to go out to restaurants, too. A restaurant near my office has a meatless Monday option. They have these delicious zucchini lasagna roll-ups I've been dreaming about since working from home.
Until I can get my restaurant fix, I decided to take a stab at making this dish at home. One of the reasons the restaurant version is so good is because it's all about the cheese. I am always looking for ways to lighten up dishes at home, without losing flavor, and I believe this recipe achieves that goal.
I love that ricotta cheese is both in the middle of the zucchini and on top with the added mozzarella -- that once broiled and melty -- has a cheesy taste in every bite. I highly recommend serving this with crunchy bread to sop up all the sauce.
The best part is this can be made a day or two in advance and ready to pop in the oven when needed. And don't tell anyone, but you can sub in cottage cheese for this recipe too if that's all you have on hand -- just put the cottage cheese in the food processor to whip until smooth. No one will know -- pinky-swear!
I love these zucchini lasagna roll-ups -- all the taste of a cheesy lasagna without all the fuss. This recipe is especially comforting because we've had a long cold spring. It tastes indulgent, but it's really deliciously light.
Serve with a side salad and a glass of wine. Dinner is served in less than 30 minutes.
