I prepared a Greek-inspired flatbread with green beans and a balsamic monk fruit glaze and pepita pesto.
I chose this dish because lamb always reminds me of a Greek dish, and I also thought that this is a great meal to make during the week. Green beans go very well with the dish too.
I thought the mystery ingredients were great. I was not familiar with the monk fruit, but it made a great glaze and paired very well with the balsamic vinegar. I also love pepitas. I toast them all the time and add them to many dishes. Green beans are a staple in my house.
I enjoyed making this dish very much. It ran very smoothly. The only thing I was really concerned about was the monk fruit, and it worked great.
They always say to go with your first ideas so I did. Right after picking up the mystery bag, the flatbread came into my head, so I went with it. Hopefully, it was the right choice. I wanted to find something else to do with the pepitas, so I thought the pesto worked great.
We all loved it, even me. I am the fussy eater. I brought some to my neighbors, and they asked for more -- a good sign.
No real surprises. As I said, I was very happy with the ingredients. Kudos to the sponsors. I had a great experience putting this together. I enjoyed it. I especially loved eating the pepitas. They are all gone.
I am thrilled with my presentation. I love color, as everyone knows, and I think I have just enough.
