Marigold Maison opening in Lincolnshire

Marigold Maison, an upscale Indian restaurant that moved from Bannockburn to Lincolnshire, is opening today, a few weeks later than initially scheduled.

Executive Chef Sunil Kumar, who oversees the culinary program for Marigold Maison's Phoenix and Lincolnshire locations, said the eatery moved to gain more visibility at 900 Milwaukee Ave. Named after the edible flower used in India for prayer, wedding necklaces and for garnishing foods, Marigold Maison will open at 4 p.m. today.

Lincolnshire Commons' proximity to other restaurants, stores and the Regal Cinemas movie theaters was a big draw, the company said.

The center is within what's become a restaurant row for the village. Other eateries on or near that stretch of Milwaukee Avenue include Wildfire, Big Bowl, Red Robin, Eddie Merlot's and the Half Day Brewing Company.

Marigold Maison, expected to employ about 20 people, first opened more than a year ago at 2535 Waukegan Road in Bannockburn. The Daily Herald named it one of the best new suburban restaurants of 2015.

The restaurant is driven by fresh ingredients that are prepared based on each guest's individual order. The menu presents traditional Indian cuisine with a modern twist. Chef Kumar draws influence from a number of cities across India, including the southern and northwestern regions, as well as local street food favorites. Marigold Maison incorporates more than 50 spices into the dishes throughout the menu, many of which are roasted in-house.

Chicken tikka masala, which sells for $16, is a favorite dinner selection, Supervisor Clemens Uriostegui said Tuesday. Marigold Maison's menu includes traditional dishes, such as lentil soup, samosa, chicken tandoori and a variety of curries.

Marigold Maison is a part of the JNK Concepts family, which includes sister restaurants Roka Akor, Japanese steakhouses in Chicago, Skokie, San Francisco, Scottsdale and Houston. The Lake Forest-based restaurant group was founded by John Kapoor who is also the chairman of the Lake Forest-based firm Akorn Pharmaceuticals.
