Terri Wemlinger Round 1 Challenge 4

I prepared Teriyaki Turkey Tacos with Asian Red Cabbage Slaw, with Avocados, Grilled Pineapple and Pea Pods. For dessert, Mexican Chocolate Avocado Mousse. I chose this dish because I love Asian food and Mexican food and especially love them together. I felt like the basket was chosen specifically for me, as every ingredient was something that I know and love. When I opened the basket, I was disappointed because I had not read the letter yet and didn't realize I was still required to get two more ingredients and was a little sad that there wasn't more of a challenge. Then I read the letter and saw the words 'red cabbage' and thought, 'Now you're talking!' I am excited to be part of this challenge and hoping to make it to the next level. So far, no lows. My testers are extremely pleased with the recipe and love my cooking. I am surprised I thought I had more time to prepare, but with work, school and the contest, I am learning to prioritize. My overall feelings are I am grateful to be included and excited to show off my creative side. Cooking is just another way for me to express my raison d'ĂȘtre.
