Chubby Cattle’s all-you-can-eat Wagyu barbecue coming to Rosemont in 2026

The increasingly popular communal dining experience that is tableside barbecuing of top-of-the-line, all-you-can-eat Wagyu beef is coming to Rosemont’s entertainment district.

Chubby Cattle BBQ, a restaurant chain that started in Los Angeles in 2023 and is rapidly expanding nationwide, is set to open at 5490 Park Place in Rosemont’s Parkway Bank Park in summer 2026.

It’ll be the restaurant’s third Illinois location, following the first that opened about a year ago in Chicago’s Chinatown, and the second coming soon on the lower level of Woodfield Mall in Schaumburg.

Diners can choose from a three-tier, all-you-can-eat menu priced between $55 and $85 per person featuring American and Australian full-blood Wagyu, Japanese A5 Wagyu, and a variety of seafood, sushi, hot dishes and vegetables.

In Rosemont, Chubby Cattle will replace a Harley-Davidson dealership that closed a year ago. Renovations are now underway to build out the 9,600-square-foot restaurant space on the first floor of what is a village-owned building.

The village board this week agreed to lease the space for a 10-year term, with two, 5-year extension options, at $40 per square foot per year.

The village is putting $4 million toward renovations — such as the extensive heating and ventilation systems needed for the tableside grills — of which the restaurant will pay back $1 million, under terms of the deal.

While other non-dining commercial users were considered for the space left vacant by the motorcycle dealership, Mayor Brad Stephens doesn’t believe the new eatery will lead to an oversaturation of food options in the restaurant-heavy entertainment district.

“It’s great for the office user as well as a draw to the region,” Stephens said. “We thought about other potential entertainment users, but this one I think we’re comfortable with.”

Meanwhile, the Chicago Wolves will relocate their team offices from Glenview to the brick building’s top floor, taking up the entire 10,000-square-foot space. A first-floor lobby will be constructed for the Wolves during the upcoming renovation project, which is expected to take about six months, Stephens said.
