Three restaurants highlight new tenants coming to The Arboretum of South Barrington

A trio of new restaurants backed by venerable names in the hospitality industry are on tap to open this year at The Arboretum of South Barrington, the center’s management announced Thursday.

The new offerings will include Giostra by Fabio Viviani in the space formerly occupied by Incontro A Tavola. The concept will team Viviani, an Italian chef, restaurateur, cook book author and “Top Chef” fan favorite, with Bill Stavrou, the founder and CEO of food delivery service Foodhaul and the Incontro team.

Expected to open this spring, the restaurant will serve old-school Italian recipes Viviani grew up with in Tuscany, according to Arboretum management.

"I am bringing the best of traditional Italian food created by family recipes to my neighborhood and will pair these menu items with a curated wine list focused on exclusive wines from Italy,” Viviani said in Thursday’s announcement.

This summer will bring The Greggory Hearth & Tavern and Tangled Roots Brewing Company to the center.

The Greggory is the result of a partnership between Gregg Horan, former managing partner of Gibson’s Restaurant Group, and Bill Veremis, former managing partner of Rosewood Restaurant.

Anchored by wood-fired hearth cooking, the restaurant will offer a marriage of classic American food and Mediterranean flavors, according to Thursday’s announcement. Eddie Ishaq, the former executive chef at RPM Steak in Chicago, also is part of the team.

In addition to its beers, crafted from hops and barley grown on a family farm in Ottawa, Tangled Roots will offer a full-service menu. The brewpub has other locations in Ottawa, Glenview, Lockport and DeKalb.

Other planned additions to The Arboretum this year include Pure Green Juice Bar and Neon Soul yoga studio, both set to open this winter, center management said.

They’ll join recent Arboretum additions including: Grant & Dunne Styling Bar; Te’ Amo, a boba bar and dessert cafe; and the reopened Bullseye Axe Lounge. All three opened in December.

“We are very pleased with our continued momentum as we start a new year,” General Manager Cory Born said in the announcement. “Our shopping center is performing well as both tenant demand and occupancy increases.”
