Kim Bradley on Challenge No. 1
When I found out what was in the bag, I thought, "Oh no! I don't like lamb at all. How am I going to make something I don't like?"
I tried to think of something clever, but my mind kept going back to meatballs. Then I thought about pitas and hummus, which goes well with lamb. My family loves lamb, so I know what they like with it.
I came up with Middle Eastern sliders.
The monk fruit extract was the tricky one, being that it is about 250 times stronger than sugar. I incorporated it in the pickled green beans with red onion and in the tzatziki sauce.
It took me a while to create this recipe, but after putting everything together, making everything from scratch, I realized that the home cook could purchase some of these sauces and doll them up for a semi-homemade version and be just as good.
I was thrilled when everyone that sampled my dish said it was amazing. My son is still talking about it. He wants me to keep this on my cooking rotation. I'll just have to use ground beef for my slider.
It was a challenging bag of ingredients, but it all worked out well. I learned that even though I disliked the protein part of the bag, I could still make it work.
