I prepared for you mackerel tacos along with mango salsa and jalapeño mustard and spinach aioli along with a cabbage slaw and accompanied by fried plantains. With the ingredients in the basket, I thought that it would work well. I make fish tacos at home using different types of fish. When I experimented with the mackerel, I was very surprised at how nice they came out. Would I taste them … no. But I did let my cousins eat them, and they thought they were good.

When I received the mystery ingredients, I had the look of fear on my face. I have never eaten the mackerel before, and I don't eat canned fish but I wanted to make it work, and I was actually pleased. There may be several different steps in the recipe, but actually, everything is very simple to make. I put the plantains in there for a little different touch, and it goes with the tacos very well. I didn't think that the dish would be as appealing as I made it, but I was pleasantly surprised. I'm very excited to see what the judges will think. Fingers crossed and lots of praying.
