Simple sautéed scallops on the fly
This simple sautéed scallops recipe is easy and fast. When you're shopping for scallops, you'll find that there is a difference. There are some labeled as wet and others labeled as dry. The wet scallops have been injected with a solution to help them retain their color and freshness. When buying wet scallops by the pound consider that you may be also paying for this solution as these type of scallops are heavier.
My preference is to purchase dry scallops when possible. If you don't want to spend the money on larger sea scallops you can easily use this recipe with smaller and less expensive bay scallops. Whichever you choose, you will have the best results if you pat dry the scallops before cooking. This is one of my most viewed recipes and is easy enough for a weeknight dinner and tasty enough to serve to company.
