Kim Bradley Round 1, challenge 5

Before I learned my secret ingredients, I dreamed about cooking. Once I picked up my blue bag and saw what was inside, I was relieved to find chicken thighs, dried apricots, butternut squash and couscous. On the ride home, ideas flew through my head. Over the weekend, I narrowed it down to two dishes and tried both of them. Each meal had something I loved and something I did not. The side dish was hard because I don't use a lot of couscous in my cooking, so that required additional experimentation so it was back to the drawing board. After the third try, my family told me they loved it and want me to make it one of my go-to dinners. Inventing an original recipe is always a blast. It's amazing how many different ways these ingredients work together.
