Mike Baron Round 1, Challenge 3

The dish that I prepared is a Savory Turkey & Egg pizza, on pita flat bread. Once I received my ingredients and saw the pitas, I knew right away that I was going to use them as the foundation of my dish. The remaining ingredients of cheese, spinach and ground turkey made sense to me to use as a topping. The dilemma that I faced was how I was going to hold the ingredients together and keep them stable on the pita. As I thought about it, I decided to give scrambled eggs a try, and was pleasantly surprised how well it worked. I used the cheese as the layer between the pita and turkey/egg mixture as binder and on top for presentation and color. The biggest challenge was with the cooking of the egg mixture in a way it would not overcook so it would not dry out once on the pita and in the oven. The turkey, spinach and eggs are done out of the pan and the oven step is for melting the cheese along with warming and browning the pita. The dish came out great and can be served as a dinner or lunch entree as easily as for breakfast.
