Chelsea LaValle Round 1 Challenge 4

The dish I prepared was Southwest Turkey Tacos with a Grilled Veggie Slaw. I was excited to work with these ingredients due to their bold flavors and striking contrast in colors. At first, I began overcomplicating the dish, rather than allowing the secret ingredients to come forth. I changed the concept of the dish by using the secret ingredients in multiple ways by dicing the avocado and creating an avocado puree. When working with the turkey breast, I created a rub containing hints of sweetness, heat, saltiness, and acidity and I roasted it in the oven, allowing the juices to fall to the bottom of the pan creating rich and savory 'pan juices.' Before plating the turkey breast, I sliced it into medium-sized strips and tossed it into the pan juices. When plating the dish, I placed each taco in the middle of a lemon that was cut almost in half to add height to the dish and I topped the taco with fresh cilantro to add brightness. The response of my testers was well received and they provided beneficial advice in relation to seasoning. Overall, this experience was a wonderful opportunity and a rewarding challenge.
