Down Home Collard Greens

Cooking spray

1 smoked turkey leg bone or 4 ounces turkey ham, diced

2 pounds collard greens, washed and cut into 2-inch pieces

4 cups reduced-sodium chicken broth

2 tablespoons minced garlic

2 teaspoons onion powder

Pinch red pepper flakes

Black pepper to taste

Vinegar to taste

Spray large soup pot with cooking spray. Heat over medium heat until hot. Add turkey leg and cook 2 to 3 minutes, turning occasionally. Add collards, broth, garlic, onion powder, pepper flakes, black pepper and vinegar. Cover and cook 2½ hours, stirring occasionally.

Remove bone; shred any meat into the greens. Serve immediately.

Serves 10.
