Tidal Wave Granita

1¿ cups water

½ cup sugar

½ cup frozen lemonade concentrate

˜ cup vodka

˜ cup blue curacao

4 drops blue food coloring

Stir water and sugar in saucepan over medium heat until sugar dissolves. Bring to boil then remove from heat.

Add lemonade concentrate and stir until dissolved. Add vodka, curacao and food coloring and stir until blended.

Place into shallow container, such as Tupperware, with a lid. Put into freezer, uncovered, until it firms up. Then stir with fork occasionally, for about 3 hours. Cover and freeze 6 hours or overnight.

Scoop into dish or glasses and serve. Garnish with lime or star fruit slices.

Serves eight.

Cook's note: For a fun presentation, use clear glasses such as champagne, martini or cordial glasses. Or mold the granita and serve on a plate.
