Spears Bourbon-Burgers-Beer's focus on bourbon, a concept unrivaled in the Chicago area, was sparked by and is in the tradition of the drink, which is a strong cultural element of America's rich history, and often referred to as "America's own spirit." Romeo named the restaurant after Jacob Spears, who is credited as the first distiller to actually label his product "Bourbon," after Bourbon County, Kentucky.
