Wines, Not Beer, For St. Patrick's Day
Everyone always talks about beer when it comes to St. Patrick's Day but wine can be just as fun! In fact, while Ireland is best known for its whiskey and beer, it also grows Cabernet Sauvignon, Chardonnay, Muscat, Gewurztraminer and other grapes. Here suggestions from Lynfred Winery in Roselle for some festive wine and Irish pairings:
CORNED BEEF: Sparkling Rose', Riesling, Vermentino, Pinot Grigio, Pinot Noir, Merlot, Zinfandel
REUBENS: Sauvignon Blanc, Viognier, Riesling, Syrah, Malbec
BANGERS AND MASH: Pinot Grigio, Zinfandel, Syrah
LAMB STEW: Zinfandel, Merlot, Malbec
COLCANNON: Chardonnay, Syrah, Cabernet Sauvignon
FISH AND CHIPS: Pinot Grigio, Rose', Sauvignon Blanc, Chardonnay
Need a recipe, with wine pairing, to celebrate the Irish? Lynfred Winery chef Christopher Smith shares one of his favorite Irish recipes, a Dublin Coddle Stew (Irish Hot Pot paired with Sangiovese):
DUBLIN CODLE STEW a.k.a. Irish Hot Pot
INGREDIENTS
2 pounds seasoned Irish bangers sausages
2 large onions, large dice
1 pound lean sliced bacon
2 cloves garlic, sliced
4 large potatoes, peeled and sliced
2 carrots, sliced
Fresh herbs: thyme & parsley
Pepper to season
Chicken stock (no salt added)
PREPARATION
Head some oil in a pan. Quickly brown sausages on all sides then remove from pan. Add a little more oil to pan and add onions and garlic and fry until soft.
Place sausages, bacon, potatoes and carrots in the pan with the onions and garlic.
Cover with chicken stock and cook over moderate heat for one hour or until vegetables are fork tender.
Serve with Irish Soda bread and Sangiovese.
