Watermelon-Lime Sorbet

3 cups water

1 cup sugar

4 cups (approximately) seeded and cubed watermelon

Juice from 1 lime

Zest from one lime

In a medium saucepan, combine the water and sugar and place over medium-high heat. Stir until sugar is completely dissolved. Remove from heat to cool. Refrigerate for a minimum of 4 hours (or cool in the freezer for 30 minutes).

Meanwhile, puree the watermelon with the lime juice and zest in a blender or food processor. When the simple syrup is cold, stir into the fruit juice mixture. Freeze in a shallow pan, scraping the sides down and toward the center every 30 minutes or until mixture is to desired consistency. Or place in the bowl of an electric ice cream maker and process according to manufacturer's instructions.

Start to finish: 20 minutes preparation; freezing time varies

Yield: Makes about 1 quart; serves 8 (1/2 cup servings)
