Blueberry Banana Bread

½ cup butter, soft

1 cup sugar

2 eggs

1 teaspoon vanilla extract

1½ cups flour

1 teaspoon baking soda

½ teaspoon salt

2 large bananas, mashed (1 cup)

¾ cup blueberries

Heat oven to 350 degrees.

In a large bowl with an electric mixer, cream butter and sugar. Add eggs and vanilla and mix until well combined.

Add flour, baking soda and salt; mix to incorporate. Add bananas and mix until well combined. Fold in blueberries gently and pour batter into a 9-by-5-inch loaf pan. Bake 1 hour.

Serves eight to 10.

Cook’s note: If using frozen berries, thaw and dry thoroughly before adding to batter.
