Turkey Burgers

1½ pounds (92-percent) lean ground turkey

1/3 cup chia seeds

¼ cup orange juice

2 tablespoons fresh lime juice

3 tablespoons sesame seeds

¼ cup chopped scallion

3 tablespoons chopped fresh cilantro

2 teaspoons tamari

2 tablespoons chopped peeled fresh ginger

Sea salt and freshly ground black pepper to taste

Extra-virgin olive oil (optional)

Combine all the ingredients except the oil and form into eight patties.

Heat the oven to 375 degree or heat a little olive oil in a skillet. Bake or pan-cook the patties for 8 minutes on each side, serve on a sprouted wheat bun or over greens.

Serves eight.

Nutrition values per baked burger: 200 calories (51.3 percent from fat), 11.4 g fat (2.5 g saturated), 6.1 g carbohydrate, 4.9 g fiber, 16.8 g protein, 68 mg cholesterol, 168 mg sodium.
