Whole Wheat French Toast with Quick Berry Sauce

2 slices whole wheat bread

1 egg

¼ cup skim milk

½ teaspoon vanilla extract

¼ teaspoon cinnamon

2 tablespoons water

4 ounces frozen strawberries

4 ounces frozen raspberries

¼ teaspoon zero-calorie sweetener

Cut slices of bread in half diagonally.

In a medium bowl, whisk together an egg, milk, vanilla and cinnamon. Dip the bread into the egg mixture until it is evenly coated on both sides; set aside.

Spray a large skillet with cooking spray and place over medium heat. When pan is hot, cook the bread until golden brown on both sides. Remove to a plate and keep warm.

For the sauce: In a microwave-safe bowl, heat the water and berries on High until hot and soft, about 5 minutes. Stir in calorie sweetener.

Serve the French toast warm with sauce drizzled over the top.

Serves two.

Nutrition values per serving: 155 calories, 3 g fat, 24 g carbohydrate, 4.5 g fiber, 10 g sugar, 7.5 g protein, 80 mg cholesterol, 176 mg sodium.
