Watermelon Field Goal Bites
½ cup balsamic vinegar
2 tablespoons sugar
12 1-inch cubes seedless watermelon
12 canned mandarin orange segments
12 mint leaves
Heat grill to 300 degrees.
In a small, heavy-bottomed saucepan, stir balsamic vinegar and sugar until well combined. Bring to a boil and stir occasionally for 5 minutes or until reduced by two-thirds. Remove from grills and let cool.
Using a melon baller, scoop out a small semi circle in top of each watermelon cube (eat small watermelon bits or save for another use). Set scooped cubes on paper towels to drain for 10 minutes.
Pour balsamic mixture into scooped tops. Garnish each bite with a skewered mandarin orange and mint leaf.
Serves four to six.
