What is your favorite ingredient and how do you like to use it? Cumin. I like to roast it in a cast iron skillet until it is just turning darker and releases fragrance. Then I grind the seeds in a whirly blade coffee grinder (used only for spices). It is the “special flavor” alongside its friends like paprika, Mexican chile powder, and fresh grated nutmeg.

Describe your style or approach to cooking. Go to a fine grocery store and look to see what’s fresh and in season. The meal starts to assemble by inspiration. Variety rules with emphasis on vegetables, textural diversity, and colors. Presentation is important.

Why do you want to be part of the Cook of the Week Challenge? My cooking is inspired by my parents who owned restaurants for many years. What I cook is quite different from what they did, but they set the foundation for my love of cooking. Also, I am noted for being a fine cook by friends and family and gladly serve as the main cook in the household (wife and two sons). Why enter this great contest? I think I can win, but of course also have fun and learn from others as they hopefully may learn from me.
