Squash those Halloween cravings with orange food

Desperation Dinners

Join us in celebrating Halloween with orange food! Every year about this time, we start loading up on beta carotene in the form of vegetables, juices and sauces.

I'm nuts about this holiday, so I'll also be pulling out my spider-web-embroidered tablecloth, my witch statue and the ceramic pumpkin my mom made for me three decades ago. Oh, and I can't forget the orange twinkle lights!

On the food front, you can't go wrong with today's recipe for Roasted Butternut Squash with Maple and Brown Sugar. This is a simple, straightforward presentation that will appeal to adults and any trick-or-treaters you might have around the house. (The sweetness of this recipe should be enough to keep them around the table long enough to get a good dinner before heading out into the night air in search of treats.)

Suggested menu: Roasted Butternut Squash with Maple and Brown Sugar, oven-fried chicken strips and steamed broccoli.
