Kitchen Scoop: Egg sandwich a reminder of past Mother's Day breakfasts

With Mother's Day this weekend, I've been remembering all the celebrations of the past. For me, this year will likely be very different and probably celebrated alone, with my family spread across the world. However, I will celebrate my mom, my daughters, and all the wonderful “mothers” who have touched my life. Isn't that what Mother's Day should really be about?

When my daughters were young, they made a great deal about pampering me on “my” day. Breakfast in bed was usually just the beginning of their plans. And what a treat it was! So I'm treating myself and celebrating this Sunday to breakfast in bed. Nothing fancy, but nothing difficult because I'll be doing the cleanup as well. But I will make something warm and comforting and reminiscent of all the previous celebrations.

Today's recipe is a mix of the fried egg sandwiches I grew up on. It's also indicative of my expanded palate. I load my eggs with so many veggies that they fall apart without the cover of cheese. I love Dijon mustard with my eggs, and if you've never tried it, give it a shot. The slight heat of the mustard is just the right zip a breakfast sandwich needs.
