Ground turkey and oat flour meatballs

1 tablespoon coconut oil

1 carrot, chopped

1 rib celery, chopped

1 large onion, chopped

4 garlic cloves, chopped

2 pounds ground turkey

¾ cup oat flour

1 teaspoon basil

1 teaspoon oregano

Salt and pepper to taste

Saute the chopped vegetables in the oil. After the vegetables have softened and started to fill the room with fragrance, spoon the vegetables into a food processor, and process until smooth.

Let vegetables cool slightly and add to a large bowl along with the meat and oat flour; stir (or use your hands) to mix until completely incorporated. Add the herbs last along with salt and pepper for taste.

Start by cooking one small meatball at medium high heat until it is cooked to about 165 degrees. Taste it and adjust the seasoning if needed. After adjusting the flavor, fry the rest of the meat mixture, and enjoy a delicious dinner!

Makes 24 medium meatballs; serves six.
