Mami Mac and Cheese

8 ounces whole wheat pasta

Chopped broccoli, to taste

1 cup organic milk

Chopped ham, to taste

2 cups grated or diced cheese, such as cheddar, Swiss, American or parmesan

2 teaspoons chicken bouillon

Freshly ground nutmeg

Few drops black truffle oil, optional

Bring water to boil in a large pot. Add pasta and the chopped broccoli and cook until pasta is al dente, about 8-10 minutes. Drain the pasta and broccoli and put back in the pan. Return to heat and add a little milk, just enough so you can see it under the pasta (if your pasta is swimming in it - it is too much).

Add bouillon. Then add the chopped ham and all the cheeses; stir it all in and keep stirring until all the cheese melts. Sprinkle some freshly ground nutmeg. Taste and adjust for salt. Add black truffle oil if desired.

Serves four.

Cook's note: Cooked turkey or bacon could be added in place of the ham. Try this with ricotta, cream cheese and/or mozzarella.
