Grilled Mango Salsa

3 mangos, "cheeks" cut off (2 "cheeks" per mango), discard pit

1 small red onion, peeled and cut into ½- inch slices

3 jalapeño peppers, seeds removed and cut lengthwise

1 tablespoon olive oil

1 lime, zested and juiced

⅛ cup cilantro, finely chopped

Salt and pepper to taste

Preheat grill to medium high.

Oil cut sides of mangos. Place fruit on grill, cut side down and grill until the mangos have grill marks on the cut side. Remove from the grill and cool.

Oil both sides of the onion slices and jalapeños and grill on both sides til the vegetables have grill marks. Turn over the vegetables to mark the other side. Remove from the grill and cool.

Remove the mango fruit from its skin and chop into medium chunks. Chop the onion and jalapeño pepper into small pieces. Combine the mango, onion and jalapeño pepper into a bowl. Add the lime zest and juice and stir to combine. Season to taste with salt and pepper. Serve with tortilla chips.
