Easy-to-Make Cabbage Slaw

½ cup reduced-fat sour cream (preferably organic or hormone-free)

½ cup low-fat mayonnaise

2 tablespoons white wine vinegar

2 tablespoons fresh-squeezed lemon juice

1 tablespoon extra-virgin olive oil

1 teaspoon celery seeds

1 packet (equal to 2 teaspoons sugar) natural sugar substitute

1 small head (about 1½ pounds) green cabbage, shredded

1 medium carrot, peeled and grated

¼ medium onion, grated

Sea salt and fresh-ground black pepper, to taste

In a large mixing bowl whisk together the sour cream, mayonnaise, vinegar, lemon juice, olive oil, celery seeds and sugar substitute until combined. Add cabbage, carrot, onion and season with salt and pepper. Toss until coated with dressing. Taste and adjust seasoning. Serve immediately.

Serves six.

Nutrition values per serving (without added salt): 122 calories (47.4 percent from fat), 6.4 g fat (2 g saturated), 15.3 g carbohydrates, 3.4 g fiber, 4 g protein, 10 mg cholesterol, 229 mg sodium.
