Smokey Baked Lentils
2 cups lentils
6 cups water
1 tablespoon salt
6 slices bacon, fried and chopped
1 can (7 ounces) chipotle peppers, chopped
½ yellow onion, chopped
3-4 cloves garlic, chopped
½ teaspoon cracked black pepper
1 teaspoon sea salt
1 teaspoon smoked paprika
Heat oven to 350 degrees.
Add water, salt and lentils to a 6-quart pot. Bring to a boil, after water is boiling lower heat to simmer for 30 minutes. Drain lentils in a strainer.
Add lentils, bacon, peppers, onion, garlic, salt, pepper and paprika to an 8-inch square pan. Bake for 30 minutes.
Serves four.
