Swedish Spice Cake

1½ cups sugar

1 cup butter

2 eggs

2 cups flour, sifted

1 teaspoon baking soda

1 teaspoon cinnamon

1 teaspoon ground cloves

1 cup yogurt or sour cream

1 tablespoon orange juice or 1 teaspoon orange zest

Heat oven to 350 degrees. Prepare pan by spraying with cooking spray and lightly dusting with flour. Cream room temperature butter and sugar for five minutes. Lightly beat two eggs in a small bowl with a fork to break up whites. Add the room temperature eggs to butter mixture in two additions until incorporated.

Sift together flour, baking soda, cinnamon and cloves. Combine yogurt and orange juice. Add one-third of the flour to the butter mixture, and mix till just incorporated alternate with half of the yogurt again mixing till incorporated, repeat ending with the flour mixture.

Pour into prepared pan smoothing the mixture into the corners of the pan. Bake 45-60 minutes or until cake begins to pull away slightly from the edges of the pan, or a toothpick inserted comes out with only a few crumbs.

Serves eight.
