¼ cup kosher salt
1 teaspoon ground white pepper
2 teaspoons ground ginger
2 teaspoons ground coriander
½ teaspoon ground allspice
½ teaspoon cinnamon
1 teaspoon ground mace
½ teaspoon cayenne pepper
1 teaspoon turmeric
½ teaspoon ground cardamom
In a blender or spice grinder, or with a mortar and pestle, grind all the ingredients together. Store in a sealed jar or plastic bag.
