Ken’s Favorite Dip

1 can (12 ounces) black beans, rinsed and drained

1 can (12 ounces) Mexicorn, rinsed and drained

2 avocados, peeled and chopped

3 medium tomatoes, seeded and chopped

3 green onions, chopped

1 small red onion, chopped

¼ cup red wine vinegar

¼ cup virgin olive oil

1 packet (0.7 ounces) Italian dressing mix (such as Good Seasons)

Tortilla chips

In a large bowl combine the beans, corn, avocados, tomatoes, green and red onion.

In another bowl, combine the vinegar, oil and dressing mix. Add dressing to vegetables and stir gently to combine.

Serve with tortilla chips.

Serves eight to 10.
