Bob’s Lemon Squares

Crust

2 cups all-purpose flour

½ cup powdered sugar

1 cup melted margarine

Filling

4 whole eggs

2 cups sugar

4 tablespoons all-purpose flour

1 teaspoon baking powder

¾ cup bottled lemon juice

Powdered sugar, for garnish

 

Heat oven to 350 degrees. Spray the bottom and sides of a 9-by-13-inch glass pan with nonstick spray.

For the crust: In a small bowl, mix flour, sugar and margarine until well combined and pat into bottom and sides of prepared pan. Bake for 20 minutes.

For the filling: In a large bowl, beat eggs, sugar, flour, baking powder and lemon juice until well combined; pour over hot crust and bake for 25 minutes.

Let cool before serving. Dust with powdered sugar.

Serves 15 to 20 pieces.
