Beefy Asian-style Lettuce Wraps
Start 2013 with boldly flavored beefy wraps that also happen to be low in fat.

1 pound 90 percent lean ground beef
1 cup chopped red bell pepper
˝ cup chopped onion
2 tablespoons minced garlic
1 teaspoon minced fresh ginger
˝ cup duck sauce, or more for serving
4 tablespoons low-sodium soy sauce, or more for serving
2 teaspoons Sriracha sauce, or more to taste
2 teaspoons toasted sesame oil
12 medium romaine lettuce leaves
In a large nonstick skillet, crumble and stir the beef. Cook over medium heat until beef just begins to brown, about 4 minutes; add red bell pepper, onion, garlic and ginger. Stir and cook until beef is cooked through, onion is translucent and pepper is tender.
Reduce heat to low and stir in remaining ingredients, except lettuce. Simmer 5 minutes, or until ready to serve (can simmer up to 20 minutes).
Spoon beef filling into lettuce leaves and roll, or leave in a boat shape. Serve with additional duck sauce and soy sauce, if desired.
Nutrition values per serving: 277 calories, 9 g fat (3 g saturated), 10 g carbohydrates, 2 g fiber, 36 g protein, 101 mg cholesterol, 761 mg sodium.
