Anise Biscotti

1 stick butter flavored shortening

11/3 cups sugar

6 eggs

2 teaspoons anise oil or extract

1 teaspoon vanilla extract

4½ cups flour

5 teaspoons baking powder

¼ teaspoon salt

Heat oven to 350 degrees. Grease two to three cookie sheets.

In a large bowl, cream shortening until light and fluffy; add sugar and beat until well combined. Add eggs, one at a time and blend well. Add flavorings. Gradually add flour, baking powder and salt. Blend well.

Form into 3-by-10-inch logs and place on prepared pans. Bake 25-30 minutes or until browned and loaves feel hollow when tapped.

Cool loaves and slice diagonally. Place cut side down on pan and toast in 350 degree oven for about 15 minutes. Slices can also be drizzled with melted chocolate when completely cooled.

Makes four to five dozen.

Cook’s note: Almond extract can be substituted for the anise. Toasted, chopped almonds or miniature chocolate chips can be folded into batter before baking.
