Baked Brown Rice and Peach Custard

4 cups cooked brown rice

2 peaches, peeled and diced (or 2 cups frozen peaches, thawed and diced)

2 cups skim milk

3 eggs

¼ cup agave nectar (or cup honey)

1 teaspoon vanilla

½ teaspoon cinnamon

¼ teaspoon nutmeg

Preheat oven to 350 degrees. Coat 9x13 baking dish with cooking spray. Place rice and peaches in baking dish. In a separate bowl, whisk milk, eggs, sweetener, vanilla and spices. Pour over rice and peaches. Place in oven for 40 minutes, until set. Enjoy warm with yogurt.
