Jimmy Kennedy’s Pimento Cheese

4 cups grated cheddar cheese

1 cup mayonnaise

1 jar (4 ounces) pimentos, drained and chopped

¼ teaspoon sugar

¼ teaspoon salt

¼ teaspoon black pepper

Mix all the ingredients in a large bowl until well blended.

Makes about 4 cups, enough for at least eight sandwiches.
