Le Titi de Paris alumni still cooking

For 40 years, Le Titi de Paris in Arlington Heights has been a training ground for chefs wanting to learn classic French techniques. Thats how Michael Maddox, a farm boy from downstate Illinois, ended up at Le Titi 20 years ago. Now the owners, Maddox and his wife Susan will close Le Titi this summer. But other Le Titi alumni have moved on to restaurants across the area.
