Cook of the Week: April 20, 2011

What is your favorite ingredient and how do you like to use it? I make my own spice rub. With a little variation it is great for grilled pork tenderloin, steak and chicken fajitas, or a boost to chili.

Describe your style or approach to cooking. I make my own marinades, dressings and rubs. I like to experiment. I like to take familiar flavors and give them a little twist. I rarely measure or write down a recipe — which drives my friends and family nuts! I like to keep it simple, but make it look and taste “taa-daah.”

Why do you want to be part of the Cook of the Week Challenge? Because the challenge of taking an ingredient and running with it suits my style of cooking and I love a little competition. Besides, it would be nice to know if I can stand up to other good cooks.
