Don’s Chef Salad

½ cup plus 2 tablespoons fat-free balsamic vinaigrette

1 small English cucumber, halved lengthwise, and cut crosswise into ¼-inch thick slices

6 ounces radishes, trimmed, and sliced thin

2 medium heads leaf lettuce, cored, washed, dried, and torn into bite-size pieces

8 ounces arugula, washed, dried, and torn into bite-size pieces

1 pint cherry tomatoes, quartered

1 large hard-cooked egg, cut into thin slices

2 large hard-cooked egg whites, cut into thin slices

8 ounces low-fat deli-style ham, cut into ¼-inch-by-2-inch matchsticks

8 ounces all-white meat deli-style turkey, cut into ¼-inch-by-2-inch matchsticks

8 ounces reduced-fat sharp cheddar cheese, cut into ¼-inch-by-2-inch matchsticks

Low-fat whole-wheat garlic croutons

Add dressing to medium stainless steel bowl and then fold in cucumbers and radishes; let stand 20 minutes. Add lettuce and arugula to a large serving bowl. Add cucumbers and radishes and all but 1 tablespoon dressing; toss to combine. Season to taste with salt and pepper.Toss tomatoes in remaining dressing in bowl; arrange tomatoes on greens around bowl#146;s edge. Arrange egg slices in ring inside tomatoes and drizzle with any dressing in bowl.
