Let's talk chicken! How to make the most of a whole chicken - from the first meal to the stock

I have had nearly 30 posts for this newspaper, and I have only shared one other chicken recipe. And I eat chicken about 70% of the time!

Let's fix that, shall we? These are three of my favorite chicken recipes and are on a pretty regular rotation in my house. If you've not made chicken burgers before, they are so easy and delicious, and you can customize them any way you like - by adding chopped spinach, roasted red peppers or chopped jalapeño peppers - the sky is the limit.

Although I live alone, I roast a whole chicken every two weeks. That first night I'll have it with mashed potatoes and zucchini. I'll slice the remaining breast meat for chicken sandwiches. I'll pick off the remaining meat for tacos and enchiladas, and the carcass is excellent for making chicken stock.

Lastly, my easy and simple chicken and dumplings recipe is a family favorite (my daughter makes it every two weeks!) and is ready in 20 minutes. You can even use leftover chicken from your whole chicken to make this recipe. I love when you cook once, and you can eat multiple different ways during the week.
